Zhoug Recipe

This is so simple and truly one of the greats. Zhoug is a vibrant, spicy green sauce that will add a burst of flavour to any dish.

I love to mix it through yoghurt and add it to a homemade souvlaki, or on the side of biriyani, or grilled meats and vegetables.

You will need a blender of some description; I used the attachment for my hand blender. 

Ingredients:

  • 1 bunch of fresh Streamside coriander leaves and stalks.
  • 2-3 green chillies (adjust to taste) I use fresh jalapeno, you can use pickled if you like, or 1 small tspn chilli powder
  • 2 cloves garlic, peeled, whole.
  • 1 tsp ground cumin
  • 1 tsp ground cardamom
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 2 tbsp lemon juice + Zest 

Directions:

  1. Clean your coriander really well. Chop it up, chuck it in a blender with the rest of the ingredients and blend.
  2. That is it!
